【Ingredients】:

Coreless red dates: 20g

Eggs: 3

Milk: 70g

Whole wheat flour: 50g

Sugar : 30g

Lemon juice: a few drops


【Steps】:

1. The red dates are pitted, and the milk is blended into a milkshake with a blender. Separate the egg yolks and egg whites. Add the red date milk juice to the egg whites and mix well.

2. Sift in the whole wheat flour, mix well in Z shape, drip lemon juice from egg white, add sugar in three times, beat until small sharp corners

3. Scoop out 1/3 of the meringue into the egg yolk paste, stir evenly, pour it back into the meringue, stir all evenly, put it into the mold, shake out large bubbles at the top, preheat the oven at 140 degrees, and bake the middle layer for 50 minutes about

4. Reverse immediately when out of the oven, and demould after letting cool


【Tips】:

1. When sending egg whites, be sure to send them in place‼ 

2. When mixing with egg yolk batter, pay attention to the technique. Enter at two o'clock and leave at eight o'clock. You can learn the technique online to prevent the meringue from defoaming and the cake will not become fluffy.‼ 

3. In addition, the temperature of the oven should not be too high, otherwise it will explode when baking.
