【Ingredients】:

Beef trim slice

250g Onion

200g Ham

250g dill

30g Butter

20g Mustard 

7g cayenne pepper

10g salt seasoned meat

80ml peanut oil

200g French Stew Vegetable Puree

200ml Red Wine

1L Brown Cattle Base Soup

500ml Concentrated Beef Base Soup

Salt and pepper to taste


【Step】:

1. Cut the beef into 10 slices and flatten. They should be about 6 millimeters thick. Peel and slice the onion and cut the ham into thick strips

2. Add butter to pan, saute onion, add ham and stir fry, cool and set aside.

3. Place the beef slices on a work surface. Brush with mustard and sprinkle with paprika.

4. Top each piece of meat with the onion/ham mixture and a portion of vegetables. Fold the ends over, roll the meat and secure it with kitchen rope.

5. Color the meat and remove from the pan. Drain excess oil from the pan. Add the pureed vegetables. Add wine and dilute completely. Boil away the taste of wine.

6. Return meat to pot, add stock and concentrated beef base, cover meat and bring to boil, cover and place in preheated oven at 200 degrees.30mins.

7. Remove the meat when it is fully cooked. Strain the sauce, skim off the oil and season to taste.
